Thanksgiving is among my favorite occasions, especially when I can spend it with my family and friends. Every year, weeks before the actual holiday my mom and I begin planning our menu. We always have the basics; turkey, mashed potatoes, stuffing…but we often will mix up what salad, vegetable and bread we serve. Some years it’s a harvest salad, roasted carrots and rustic French bread, while other years it might be collared greens, okra and biscuits. However, one thing on our menu that NEVER changes is this recipe for the best homemade turkey stuffing!
This recipe will stuff a 10-pound turkey (which serves six) plus extra. We often times will double it because we either have a larger turkey or want the leftovers. I hope you try this recipe for your upcoming Thanksgiving dinner! Enjoy!
Ingredients
- 1 1/2 cups small cubed artisanal whole wheat bread
- 3 3/4 cups small cubed artisanal white bread
- 1 pound ground organic turkey or pork sausage (consider using sage pork sausage also!)
- 1 cup chopped sweet onion
- 3/4 cup chopped celery
- 2 1/2 teaspoons fresh sage
- 1 1/2 teaspoons fresh rosemary
- 1/2 teaspoon fresh thyme
- 1 Golden Delicious apple, cored and chopped
- 3/4 cup dried cranberries (optional)
- 3/4 cup walnuts, chopped (optional)
- 1/3 cup minced fresh parsley
- 3/4 cup organic turkey stock
- 1/4 cup chardonnay or another similar white wine
- 4 tablespoons unsalted butter, melted
Directions
- Preheat oven to 350 degree F (175 degree C). Spray your baking sheet with this organic olive oil nonstick spray or use parchment paper.
- Spread the artisanal white and whole wheat bread cubes in a single layer on a large baking sheet. I drizzle them with a touch of olive oil.
- Bake for 10 minutes in the preheated oven, or until evenly toasted. Depending on how large your bread cubes are, this could take longer. Once finished, transfer toasted bread cubes to a large bowl.
- In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors.
- Pour sausage mixture over bread in bowl. Mix in chopped apple, dried cranberries, walnuts, and parsley. Drizzle with turkey stock and melted butter, and mix lightly. Allow stuffing to cool completely before loosely stuffing a turkey.
- If baking your stuffing outside of the bird, add about 1/4 additional turkey stock to recipe, heavily grease your casserole dish and cover with foil before putting into the oven for 30 minutes.
