Every Monday I start my week out healthy with my healthy chocolate smoothie, but by late morning I am ready for a snack! That’s why I began making this amazing seed bar recipe! They are nut-free, oil-free, grain-free, easy-to-make bars which take about 5 minutes of prep before sliding into the oven. Another benefit is that these seed bars are high in protein and fiber and make a great on-the-go healthy snack!
Seed Bar Recipe
INGREDIENTS
- 1/2 cup organic pumpkin seedsÂ
- 1/2 cup organic sunflower seeds (raw)
- 1 heaping cup organic flaked or shredded coconut (unsweetened)
- 1/4 cup organic sesame seeds
- 1/4 cup organic chia seeds
- 1/4 cup organic flax seeds
- 1/4 cup organic hemp seeds
- 1/2 tsp pinch salt
- 1 tsp vanilla
- 1/2 cup organic honeyÂ
INSTRUCTIONS
Preheat your oven to 325F. Mix your seeds, coconut and salt together in a medium bowl. Then, stir in the vanilla and your organic honey  and mix until perfectly combined. Grease a 8 x 8 baking pan or sheet and then place a piece of parchment in the bottom and up the sides. Spray lightly with oil.
Next, pour your seed mix into your prepped pan and using a greased spatula, spread out the mixture.,Press everything down until firmly compacted, and smooth with the back of your spatula.Last, bake in the oven for 40-50 minutes. For a chewier consistency, take out of the oven at 40-45 minutes, and for a crispier crunchy consistency, let it cook the full 50 -55 minutes!
