I’ve been making Banana Bread forever, it’s a timeless favorite for sure! However, here lately I’ve been making almost two loaves a week of this Banana Bread recipe I shared with you a few months ago….and felt like I should probably begin to switch things up. I wanted to create a healthier version that would mimic more of a breakfast muffin! After a few trials and errors, I finally landed on the perfect combination of ingredients and am excited to share with you this easy and healthy Oatmeal Banana Bread recipe I created! INGREDIENTS
Oatmeal Banana Bread
– 2 large ripe bananas
– 1 large egg, beaten
– 3/4 cup milk (or milk alternative)
– 1 cup whole-wheat flour
– 1 cup old-fashioned rolled oats
– 1/2 cup brown sugar
– 1 tsp cinnamon
– 1 tsp baking soda
– 1 tsp baking powder
– 1/2 tsp salt
– 1/2 cup chopped walnuts (optional)
– 1/4 cup chocolate chips (love these! optional)
Oat Streusel Topping
– 1/4 cup old-fashioned rolled oats
– 2 Tbsp whole-wheat flour
– 1 Tbsp brown sugar
– 1 Tbsp melted butter
– 1/2 tsp cinnamon
DIRECTIONS:
Preheat your oven to 350 degrees. Mash bananas in a medium bowl (obsessed with these non-slip mixing bowls!), then stir in egg and milk. Next, add flour, oats, baking soda, baking powder, salt, brown sugar, and cinnamon. Stir to combine, then mix in nuts and chocolate chips. Be careful not to over-stir, your batter will be very lumpy.
Next, make your topping by combining all ingredients in a small bowl.
Pour your batter into a greased 9×5 inch loaf pans (I use these toxin free ceramic Green Pans!) and sprinkle with your topping mixture. Bake 50-55 minutes for a loaf pan, and 25 minutes for muffins, until a toothpick inserted in the center comes our clean.
Note: If I am gifting these, I will bake them in these paper loaf pans, they are the perfect size and look so much nicer!
