Simple Watermelon Cocktail For Labor Day Weekend!
September 4, 2020I’m pretty excited to share the following recipe with you! Growing up my family used to make the below watermelon cocktail recipe for summer weekends and the recipe is originally from my aunt, who is from southern Mexico. It’s super delicious, easy, light and only has 4 ingredients. Hopefully, you also will find that this simple watermelon cocktail for Labor Day weekend is the perfect refreshing drink to sip on for the rest of your summer! Cheers!
INGREDIENTS
- 8 cups fresh, chilled watermelon
- 12 oz. coconut water (I use this organic coconut water )
- 4 TBS fresh lime juice
- 1 cup citrus flavored vodka, I prefer to use Pinnacle Citrus Vodka
- Fresh mint for garnish
INSTRUCTIONS
Using your Vitamix or blender, add watermelon, coconut water and fresh lime juice. Blend until smooth and then pour the mixture into a large pitcher and add Pinnacle Citrus Vodka. Stir gently.
I personally like serving this cocktail over ice, in a tall cocktail glass with a straw (love these metal straws), but you can also leave that out and serve it as is.
Finish off the cocktail with garnishes of lime wedges and fresh mint.
