We are BIG into BBQ’ing, but we are also really into smoking meats. Seriously, when I have a craving there is nothing better than a really tasty smoked Tri Tip steak, that you’ve been a slave to for 8-10 hours, coming out of the smoker ready to eat. A few years back, we decided to go and purchase a smoker, our first one. I poured through the reviews, intent on finding THE BEST BBQ SMOKER I could find. We landed upon a Green Egg, and went ahead and made the investment. Now, when it arrived, we were so excited! We got it all set up, slapped our first meat on the grill and tended to it like it was a new born baby. Eight hours later we had the most perfectly smoked meat, I could cry it was so delicious. The next weekend we tried again, we were a bit more casual this time, much less helicopter mom, and when the meat came off the grill we were honestly disappointed. We kept trying, but would only “succeed” when we literally invested all of our time “tending” to the smoker and the meat it held inside. The Green Egg was obviously not for us. We wanted to be able to leave the meat to do it’s thing and come back to it when it was ready to come off.
