When I was in my teens I remember reading an issue of Glamour Magazine in which they published a recipe for “Engagement Chicken”. Apparently, the recipe was created in 1982 when a woman made this dish for her then boyfriend and soon afterwards, the couple was engaged. The recipe made the rounds in the office and three other women in the office were offered marriage proposals soon after making the dish for their boyfriends. Next thing you know, almost 25 years later, Glamour Magazine heard about this recipe and went on to share it with the world. When I saw this recipe for the first time, I had to giggle..how silly, I thought. That’s why when I saw this recipe for Engagement Chicken Pasta, I could not resist! It looked easy and seriously delicious. The perfect meal to pair with a nice bottle of wine and some crusty French bread. I hope you enjoy and Happy Valentine’s Day! Valentine’s Day Dinner for Two: Engagement Chicken Pasta
INGREDIENTS
Makes enough for two full servings.
– 6 ounces dried or fresh spaghetti noodles (this brand is our favorite! We first tried it in Italy and were hooked!)
– 4 tablespoons butter
– 10 sprigs fresh thyme
– 10 ounces sliced cremini mushrooms
– freshly ground black pepper
– salt
– 2 small chicken breasts
– 2 teaspoons olive oil
– 1/2 cup dry white wine (I love using this kind for cooking!)
– 4 ounces cream cheese, softened
– fresh grated parmesan
INSTRUCTIONS
Bring a large pot (we love our Green Pans Non-Toxic Set) of salted water to a boil, and cook the noodles accordingly to the directions. Meanwhile, in a large not non-stick skillet, melt the butter and thyme over medium heat, being careful to not burn either.
Next add the sliced mushrooms to the skillet, and stir to coat in butter. Leave them to cook for a few minutes without stirring so they become a bit crusty. Stir, and repeat until the mushrooms are golden brown. Approximately 15 minutes.
Remove the mushrooms from the pan, leaving the butter and thyme in the pan and then add the oil to the pan.
Salt and pepper both sides of the chicken breasts.
Turn your heat up to medium-high, and sear the chicken breasts on both sides in the same pan that the mushrooms were in. Let the chicken cook undisturbed until it releases from the pan, each side should be golden brown. Approximately 6-7 minutes on each side. Once completely done cooking, remove the chicken from the pan, and cover to keep warm.
Next, turn the heat down to low and add all of the white wine, allow the wine to cook down slightly while scraping the bottom of the pan with a wooden spoon to get all of the brown bits into the wine.
Discard the thyme sprigs from the pan and turn off the stove. Cube your cream cheese and add it to the pan, stirring until it melts. Once the pasta is done, drain and immediately add it back into your wine-cream cheese mixture. Toss the noodles to melt and evenly distribute the cream cheese sauce. Next, stir in the mushrooms.
Plate your pasta and slice the chicken, serving it on top. Garnish with fresh parmesan.
