Lately, I’ve been full on craving baked goods that I’ve had in the past, whether that’s from a Farmer’s Market in Palm Springs, or a bakery off the beaten path in Hawaii, or even a local little jaunt in Cannon Beach (Oregon). So, since I clearly have some time on my hands lately, I decided I’d tackle some of my favorite recipes and recreate the goodness I remember. First up? This to-die-for Chocolate Chocolate Chip Banana Bread. The very first time I ever had this was in Cannon Beach, at a bakery called The Sleepy Monk a few years back and I still salivate at the memory. If I’m being honest, everything that little coastal bakery offers is seriously delicious. From their specialty roasted coffees, to their breakfast sandwiches, orange and chocolate chip scones (I’ll be attempting this one as well!) and even their Morning Glory Muffins (oh the muffins!). Definitely book mark this place for whenever social distancing is over and the next time you’re in Cannon Beach. So without further ado, here is my rendition of Chocolate Chocolate Chip Banana Bread! Enjoy!
Chocolate Chocolate Chip Banana Bread
Ingredients
– 1 cup butter, softened
– 2 cups organic sugar
– 4 organic brown eggs
– 6 bananas, mashed (I use medium sized bananas)
– 2 teaspoons organic vanilla extract
– 2 3/4 cups organic all-purpose flour
– 2 teaspoons baking soda
– 1/2 cup unsweetened organic Dutch cocoa powder (make sure it’s Dutch Processed for a richer taste!)
– 1 cup sour cream
– 1 1/2 cup semisweet chocolate chips
Directions
Preheat oven to 350 degrees F and lightly grease two 9×5 inch loaf pans (I use these toxin free ceramic Green Pans!). In a large bowl, cream together butter, sugar and eggs and then mix in your mashed bananas and vanilla. Next sift in flour, baking soda and cocoa and mix just until incorporated. The key is to not over mix, otherwise your flour will become stiff and your bread tough. Lastly, fold in your sour cream and chocolate chips and pour batter into greased pans and bake in preheated oven for 60 minutes, or until a toothpick inserted into center of a loaf comes out clean.
Note: If I am gifting these, I will bake them in these paper loaf pans, they are the perfect size and look so much nicer!
