This past week I took a little time off to explore some new recipes, test them out, and perfect them…so if you’re a follower on social, you saw some of my trial and errors! Well, today I’m sharing with you one of the best recipes I threw together and it was for these delicious streusel blueberry muffins! My mouth watered just typing out the name.. that’s how you know they are super yummy! But seriously, these will be the best muffins you’ve ever made. Your family will clamor for more. I promise. Below, you’ll find the recipe and just to note I used my new non-toxic muffin pans (more on those here!) and was super happy with the results. This recipe makes 12 regular sized muffins, or 6 giant muffins (think Costco size!). Please note – the photo below is without streusel. Enjoy!
Delicious Streusel Blueberry Muffins
Makes 12 regular sized muffins, or 6 jumbo

DIRECTIONS
First preheat your oven to 400 degrees and grease your muffins cups, or line with parchment muffin liners. Combine your flour, sugar, salt and baking powder from your base ingredients in a mixing bowl. Next, place your 1/3 vegetable oil into a 1 cup measuring cup and add the egg and enough milk (or milk substitute) to reach the 1 cup mark. Mix this into your flour mixture until combined and then gently fold in your blueberries. Fill your muffin cups to the top with the batter. Next, get out a small mixing bowl and mix together your topping ingredients, cutting in your butter till small and pea sized. Spoon the topping mixture onto the top of your muffin cups filled with batter. Bake for 20-25 minutes until done. Enjoy!
