Growing up, my mom used to always make these cookies which she called “Butter Cookies” (known in the Netherlands as Boterkoekjes)…they were light, crispy and seriously delicious. The recipe originally came from my aunt, who also grew up in the Netherlands, and I can only assume it came from her mother. Nevertheless, it’s become a staple recipe in my family, and easily a fan favorite. INGREDIENTS
1 cup organic butter, melted
1 cup organic sugar
1 large free range brown eggs (divided into half)
1 pinch salt
2 Â cups all-purpose flour
DIRECTIONS
Heat oven to 375°F . Mix half of your egg with a teaspoon of milk and set aside. Next combine 1 cup butter, 1 cup sugar and then half of your egg. Beat at medium speed until creamy and then add your flour; mix until combined. Once your dough is prepared, place dough onto a baking sheet (11 x 13 inches) and press out until it reaches the edges. Brush the top with your egg and milk mixture, and then decorate the top with a fork. I usually will run the fork from one end of the baking sheet to the other, creating light lines on the top of the dough. Bake in the oven for about 15 minutes until the edges are lightly browned. Once out of the oven, cool slightly and then cut into bars. ENJOY!
