I’ve been on a huge curry kick lately, likely sparked by the Stay Home movement and my inability to get takeout from my favorite Thai place because it’s closed…so I was more than motivated to figure out a way to recreate the one meal I always order. This easy one pot Coconut Curry is soooo good and sooo delicious, you’ll find yourself making it over and over. Best part? It uses very few ingredients all of which you more than likely have in your pantry already and it’s super healthy! Win, WIN! Enjoy!
Easy One Pot Coconut Curry
INGREDIENTS
- 1 can coconut milk
- 2 tablespoons red curry paste (or 2 tablespoons curry powder)
- 2 small heads broccoli (or other veggies of choice, I occasionally use frozen cauliflower, or a frozen broccoli stir fry mix)
- 1 can garbanzo beans, rinsed and drained
- 1 tbs minced garlic
- 1/2 minced onion
- coconut oil
- Cooked organic brown rice, white rice or quinoa for serving
DIRECTIONS
Saute broccoli with garlic and onion in a tablespoon of coconut oil in a large pot (LOVE this Dutch Oven from Amazon, just like Le Creuset). Once your onions are translucent, add in your curry powder or curry paste and stir in the coconut milk. Let simmer for 5-8 minutes. The broccoli (or whatever vegetables you’re using) should soften but still be tender-crisp. Last, add the chickpeas and bring to a slight boil. Serve over brown rice, white rice or quinoa!
