I recently purchased a whole new set of these non-toxic baking sheets and a few days ago I was MAJORLY craving sugar cookies with buttercream frosting…like a high quality, homemade sugar cookie with a structured, melt in your mouth buttercream. I’ve never made cookies like this – but I’ve bought them plenty of times from Crumbl Cookies and figured they’d be easy to replicate. I quickly whipped up the cookies, no problem, but then I realized I did not have nearly enough powdered sugar in order to make the frosting. Well, I decided to improvise! And the result was purely addicting. I can hardly describe to you how amazing they turned out… so try your hand at making these Maple Sandwich Cookies! I promise you’ll love them!
Maple Sandwich Cookies
INGREDIENTS
COOKIE DOUGH RECIPE:
FROSTING RECIPE:

– 2 tablespoons half and half (add as needed for a spreadable consistency)
– 2 cup powdered sugar
DIRECTIONS
First off, preheat oven to 375 degrees and line two cookies sheets (love these non-toxic ones!) with parchment paper. Next, in a small bowl, stir together flour, baking soda, and baking powder and set aside. Using an electric mixer, or your stand mixer, cream together the butter and sugar until smooth and then beat in your egg and vanilla. Lastly, gradually blend in the dry ingredients. Dough should be stiff. Finally, take a small 1 inch scoop to create 1-inch balls from your dough and place 2 inches apart on cookie sheet. Bake until very light brown and puffed, approximately 8-10 minutes. Cool cookies.
Frosting: Using an electric mixer, or your stand mixer, cream softened butter until smooth and fluffy. Gradually beat in both the powdered sugar until fully incorporated, and then add in your half and half and maple extract. Beat for an additional 3 to 4 minutes until smooth.
Once your cookies are completely cooled, spread or pipe filling on the bottoms of half of the cookies; top with remaining cookies. Make sure to store in the refrigerator.
