A few weeks ago I was in a pinch. My parents were coming for dinner and I had promised to make dessert. Of course, I had waited till last minute and quickly realized I was out of a lot of basic baking pantry staples. With no time to run to the store, I took a quick stock: I had flour, sugar, butter… but it stopped short there. I knew it was time to get creative and my solution was this recipe I concocted for Peanut Butter Streusel Brownies! I took some left over chocolate chips (not even enough to make a batch of cookies!), peanut butter.. and a very short time later this magic was created. Let me be the first to tell you – these were a HIT! Soft, and chewy, these brownies sport a absolutely yummy peanut butter streusel topping which I could just eat alone by the spoonful! PEANUT BUTTER STREUSEL BROWNIES
One thing to note. Quality ingredients are important in baking. I’ve linked below the ingredients I personally use for this recipe. Using these items will help with your success!
INGREDIENTS
BATTER
- 1 cup butter, melted (I particularly love baking with this butter)
- 3 cups organic sugar
- 1 tablespoon organic vanilla extract
- 4 free range brown eggs
- 1 1/2 cups all-purpose flour (this is my all time favorite flour for baking!)
- 1 cup unsweetened cocoa powder
- 1 teaspoon sea salt
- 1 cup semi-sweet chocolate chunks
STREUSEL TOPPING
- 1/2 cup all-purpose flour
- 1/3 cup peanut butter (I used Adam’s creamy unstirred)
- 2 tablespoons organic sugar
- 2 tablespoons light brown sugar
- 2 tablespoons unsalted butter, melted
- 1/8 teaspoon salt
DIRECTIONS
Preheat oven to 350 degrees and lightly grease a 9×13 baking dish (I love this ceramic dish!). This is an important step as you do not want them to stick!
Combine the melted butter, sugar, and vanilla in your KitchenAid. Next, beat in the eggs, one at a time, mixing well after each.
Sift the flour, cocoa powder, and salt in a bowl and then gradually stir flour mixture into the egg mixture until blended. Stir in the semi-sweet chocolate chunks morsels. Spread the batter evenly into the prepared baking dish.
Prepare your streusel by mixing the flour, peanut butter, sugar, brown sugar, butter, and salt. Stir (or use a fork) until blended and crumbly. Sprinkle the streusel mixture evenly over the brownie batter.
Bake in preheated oven until an inserted toothpick comes out somewhat clean. You want the brownies to be moist and this can range anywhere between baking them for about 45 minutes, depending on your oven, or, until a toothpick comes out clean. Do not be afraid to check regularly. Remove, and cool pan on wire rack before cutting. Enjoy!
