Nothing says autumn has arrived like fresh apples and apple pie. Growing up my parents had a small apple orchard in our backyard and every fall we had an abundance of apples. My mom would try to keep up with all of the apples by making fresh apple sauce, poached apples, apple jelly, apple bread… the list goes on and on. However, there was one recipe in particular the whole family could hardly wait for her to make – Apple Betty. Easy to make and delicious, Apple Betty is simply a crustless apple pie recipe, filled to the prim with fresh apples and topped with streusel. APPLE BETTY RECIPE
INGREDIENTS
– 4 cups thinly sliced organic apples
– 1/4 cup orange juice
– 3/4 cup organic all-purpose flour
– 1 cup organic sugar
– 1/2 teaspoon organic ground cinnamon
– 1/4 teaspoon organic ground nutmeg
– 1 pinch sea salt
– 1/2 cup (one stick) organic butter room temperature
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C) and lightly grease a 9 inch pie plate. I like using this one as it is a bit deeper and easily fits all the apples and topping, plus it’s glass and non-toxic.
Next, mound sliced apples in the pie plate and sprinkle with orange juice.
In a medium mixing bowl (these are great stainless steel bowls!), mix the flour, sugar, cinnamon, nutmeg, and salt. Cut in butter until the mixture resembles coarse crumbs and scatter over the apples. Anything that does not “fit”, press gently into the top of the apples.
Bake in preheated oven for 45 minutes. Serve warm with vanilla ice cream and be prepared to be asked by your family to make this desert every single autumn!
