– 2 cups organic all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon baking powder
– 1 teaspoon salt
– 2 Â free range brown eggs
– 1 cup organic sugar
– 4 very ripe organic bananas, mashed
– 1 teaspoon vanilla
– 1/2 cup vegetable oil
– 1 teaspoon organic ground cinnamon
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one, 9 x 5 inch loaf pan (this ceramic one is my favorite!). Don’t forget this step! It’s important! I generally use coconut oil which works really well. Next, in a large mixing bowl , or the bowl of your KitchenAid stand mixer, cream together the eggs and sugar. I generally let this run on stir while I combine the dry ingredients. In a medium mixing bowl, combine the flour, baking soda, baking powder and salt. Next, stir in the mashed bananas, vanilla, oil and cinnamon into your large bowl of creamed eggs and sugar. Last, stir in the flour mixture, a third at a time, until just combined. They key here is to not over mix! Mix just until all the flour is incorporated and all the lumps are gone. When done combining, pour the batter into your prepared 9 x 5 inch loaf pan and bake for about 1 hour.
OPTIONAL MIX-IN’S
I sometimes enjoy adding in either 1/4 cup chopped walnuts or 1/4 semi-sweet chocolate chips to the top right before I put into the oven to bake. Both options are delicious!
