Last week was my mom’s birthday, so I thought it was the perfect excuse to dig out this old family favorite recipe for the easiest chocolate cake ever! This recipe actually was created during the Great Depression, and was commonly referred to as “Depression Cake” because it uses hardly any ingredients and is made without eggs, butter or milk (bonus! it’s Vegan!) However, over the years, my mom has absolutely perfected the recipe and it’s a total staple in our household for birthdays! It’s moist, chocolatey and seriously delicious! Today, I’m sharing the recipe with you and I hope you enjoy it as much as we do!

Grease two 9 inch round cake pans.
Next, sift or whisk (love this three-piece whisk set!) the flour, sugar, salt, soda, and cocoa together in a large bowl. Then mix together your oil, vinegar, vanilla and cold water in a bowl and combine with your dry ingredients. Mix ingredients until there are no lumps.
Pour batter into your greased 9 inch cake pans.
Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Cool, and then flip out of pan. Wait until completely cooled to frost and decorate. Options: If you do not plan to frost, consider baking this exact recipe in a greased 9 x 11 glass baking pan and sprinkling with powder sugar before serving!
