I’ll let you in on a little secret. I’ve never, ever shared this recipe with anyone. It’s my ride-or-die, my foolproof, my go-to recipe for something sweet and decadent. This is the best brownie recipe ever. No joke. You can hardly even mess this one up and it has replaced every single other brownie recipe I’ve ever tried. So today, my Christmas Gift to you is this recipe for the pudgiest brownies with peppermint chocolate chunks. Happy Holidays!
The Fudgiest Brownies with Peppermint Chocolate Chunks
One thing to note. Quality ingredients are important in baking. I’ve linked below the ingredients I personally use for this recipe. Using these items will help with your success!
Ingredients
- 1 cup butter, melted (I particularly love baking with this butter)
- 3 cups organic sugar
- 1 tablespoon organic vanilla extract
- 4 free range brown eggs
- 1 1/2 cups all-purpose flour (this is my all time favorite flour for baking!)
- 1 cup unsweetened cocoa powder
- 1 teaspoon sea salt
- 1 cup Peppermint Chocolate Chunks
*To make extra fudgey, consider stirring in one cup of semi-sweet chocolate chunks into the batter along with the peppermint chocolate chunks.
Directions
Preheat oven to 350 degrees and lightly grease a 9×13 baking dish (I love this ceramic dish!). This is an important step as you do not want them to stick!
Combine the melted butter, sugar, and vanilla in your KitchenAid. Next, beat in the eggs, one at a time, mixing well after each.
Sift the flour, cocoa powder, and salt in a bowl and then gradually stir flour mixture into the egg mixture until blended. Stir in the peppermint chocolate chunk morsels. Spread the batter evenly into the prepared baking dish.
Bake in preheated oven until an inserted toothpick comes out somewhat clean. You want the brownies to be moist and this can range anywhere between baking them for 35 to 45 minutes, depending on your oven. Do not be afraid to check regularly. Remove, and cool pan on wire rack before cutting. Optional: Sprinkle the top with chunks of crushed candy cane. Enjoy!
Once cooled, enjoy your brownie with a homemade healthy peppermint mocha latte! Yum!
Happy Holidays,
M
